Chick-fil-A Style Chicken
I spent too long on this. It's close. Close enough.
Ingredients
For the Chicken
- 397g boneless skinless tenders, thighs, or breasts
For the Brine
- 1000ml water
- 67g Morton's coarse kosher salt
- 12g MSG
- 6g paprika
- 0.5g black pepper, coarse
- 5g mustard powder
- 1g cayenne
For the Milk Wash
- 236ml skim milk
- 2 eggs
For the Seasoned Coater
- 120g all-purpose flour
- 4.5g Morton's coarse kosher salt
- 4g MSG
- 11g nonfat milk powder
- 3.5g baking powder
- 0.5g white pepper
- 5g mustard powder
- 1g cayenne
Instructions
- Mix brine dry ingredients into room temperature water until dissolved. Brine tenders 2-4 hours (breasts 6-8 hours).
- Whisk milk and eggs together for the milk wash.
- Mix and sift all coater ingredients. Drizzle in 2 tbsp milk wash and crumble through with your hands before breading.
- Heat peanut oil to 325°F / 163°C.
- Pull chicken from brine, pat dry.
- Dip in milk wash, shake off excess.
- Press into seasoned coater.
- Fry about 4 minutes (adjust for thickness).
- Rest on wire rack a couple minutes before serving.
Notes: The milk powder in the breading is doing a lot of work, don't skip it. The pickle brine theory has been disproven. The secret ingredient is the ground mustard.
